Tahini-Ginger Dressing

This no-brainer sauce takes 5 minutes to whip up, and makes all your cleanse food instantly interesting. It is used in the Sesame Burdock and Pea Shoot Salad, but feel free to spoon onto fish, grilled chicken, and steamed veggies. Tahini is an excellent source of calcium, and ginger stimulates digestion and "warms" foods that are energetically cool, such as burdock root or salads.

Ingredients

1/2 c. organic tahini
1/2-3/4 c water (amount depends upon desired thickness)
1 tbsp toasted sesame oil
1 tbsp grated fresh ginger (or 1/2-1 teaspoon dried ginger)
1/2 tsp Pink Himalayan salt or 1 tsp coconut aminos or wheat-free tamari
Optional: 1 clove garlic, minced

Instructions

Place all ingredients in a blender and process at high speed. Adjust for consistency and seasoning.
