Extra burdock? Try this super speedy, asian inspired salad.
2 or 3 8-inch pieces of burdock root, about 3/4-inch diameter
1 cup pea shoots, cut into 2-inch lengths
1 recipe Tahini Ginger Dressing
2 tsp Milk Thistle Gomasio (or any sesame seed Gomasio)
Scrub the burdock roots until the dark outer skin is nearly gone.
Using a sharp knife or a food processor with appropriate attachment, cut or process the burdock roots into matchsticks.
Toss with Tahini Ginger Dressing, coating thoroughly.
Toss lightly with pea shoots, and garnish with Milk Thistle Gomasio.
