Pumpkin Energy Balls

It's that 'sweet' time of year and as much as we want to participate, we also want to keep feeling good! Learn how to make this healthy treat that even an unhealthy craving will love.

Servings: 12

Ingredients
1 cup gluten free oats 1/2 cup pumpkin puree
1/3 cup almond butter
1/4 cup raw or sprouted pumpkin seeds
1/4 cup unsweetened coconut flakes
1/4 cup sprouted brown rice protein powder or collagen hydrolysate/peptides protein powder
2 teaspoons pumpkin pie spice (or combination of ginger powder, ground cloves, nutmeg, and cinnamon)
1/4 teaspoon sea salt
1 teaspoon pure vanilla extract
3 tablespoons cacao nibs or dark chocolate chips (Usually I use cacao nibs because I enjoy the natural bitterness of raw cacao, but if you're cooking with kids or would prefer some added sweetness, I like "Lily's" Organic Chocolate Chips and "Enjoy Life" Chocolate Chips)
Optional: 2-3 tablespoons pure maple syrup
 
Instructions

Combine all ingredients together in a mixing bowl. Press into balls with your hands. Store in an airtight container in the fridge.
