Meyer Lemon - Ginger Shrub

INGREDIENTS

  • 4-6 organic Meyer lemons, zested and chopped (retain zest!) + 1 lemon
  • 1 2-inch piece of organic ginger, grated
  • 1 cup sweetener of choice (I used organic coconut nectar)
  • 1-2 c vinegar of choice (I used ACV + organic white wine)

Combine the lemon zest, chopped lemons, ginger and sweetener in a bowl. Mix and squeeze the juice of 1 lemon left (you can throw its zest in, too!)

Cover, and refrigerate for 1-3 days, stirring once a day. Strain the syrup that forms, and mix with vinegar in equal parts.

Nervine Mocktail:

  • 1-2 oz shrub
  • 1 sprig of rosemary
  • 6-8 oz sparkling water
  • 2-5 droppers of "Orange Twist"

Cocktail:

  • 1-2 oz shrub
  • 1 oz organic vodka (I like Hanson's Grape vodka)
  • 1 oz Elderflower cordial or liqueur (St Germain is the best; others are decent and much less expensive!)
  • 5-6 oz of sparkling water—a grapefruit essenced one goes nicely!
