This savory salmon is a decadent source of all the right fats. Seasoned with Garam Masala and curry it makes for a warming winter-time meal. Fill the rest of your plate with silky cauliflower and sweet green beans and you are in for a nurturing treat!
What you’ll need for this dish (for approximately 2 servings)*
A few handfuls of green beans, chopped into halves or thirds
½-1 head of cauliflower, chopped into florets
About a pound of salmon—the thicker the better
Several tsps of organic garam masala and organic curry powders
Organic olive oil or coconut oil
Salt & pepper to taste
Pre-heat oven to 400 degrees while washing and chopping veggies, and preparing the salmon.
Toss green beans and cauliflower in oil of choice with abundant garam masala, and salt and pepper to taste.
Coat salmon in a mixture of oil, curry, salt and pepper. Try to create a bit of a crust—it seals in the salmon’s moisture beautifully.
Arrange in a pan, and place in a hot oven.
In about 20 minutes, check to see that the salmon is not overcooking—it may need to be removed. Alternatively, you can start roasting the veggies ahead of the salmon and add it to the pan after they start to cook.
Allow to rest for 5-10 minutes and enjoy!
