Cacoa Mint Smoothie

2 1-inch pieces frozen green-tipped banana (they have less sugar than a fully ripe banana), or a few ice cubes
2 slices avocado
1 handful baby spinach leaves or 1/2 c frozen chopped organic spinach
1 handful mint or spearmint leaves (about 3/4 cup)
1 tsp vanilla
1 tsp spirulina or Vitamineral Greens powder by Healthforce
4-5 drops organic liquid stevia and/or 1 frozen date optional
6-8 ounces water/nut milk of choice
1 drop organic peppermint essential oil optional
1 + tbsp organic cacao nibs
1 serving protein powder of choice

Place all ingredients EXCEPT cacao nibs in a blender and process at high speed until thick, creamy and smooth. Add the nibs and spin the blender a few times to disperse them throughout the mint smoothie. If your smoothie isn't peppermint-y enough for you, you can add 1-3 drops of organic peppermint oil (my trusted brands are Simplers, Floracopeaia, Snow Lotus) and re-blend.

If you have reflux, skip this smoothie as both peppermint and chocolate can be triggers. *Note: this smoothie is best when it’s had a chance to sit—the flavors meld beautifully!
