Cheezy Chickpea Crunch

These crunchy bites will give you instant veggie protein with a nice spicy kick. Not into heat? That’s ok, this recipe works with almost any herby combo you can think of!


1 can of chickpeas
drizzle of extra virgin olive oil

To taste:
Nutritional yeast
Chili powder
Salt & pepper


Heat your oven to 375 F.

Drain and rinse your chickpeas. Pat dry with a clean dish towel. Toss them on a baking sheet and spread them out so they are in one layer. It’s ok if they’re a little moist; they will dry out.

Bake for 30 minutes, shaking the pan occasionally. While those are baking, grab a bowl and mix together the olive oil and spices. I like this blend because the nutritional yeast adds a nice “cheesy” factor but feel free to use any herbs and spices you have on hand.

When time is up, toss the chickpeas into the spice blend. Once everything is nice and coated, return them to the baking tray and roast for another 10-15 minutes. Remember to shake every now and again.

Once nice and golden, take them out and let cool.
